Straight from the dock to your door, our wild deep-water Atlantic Mayport shrimp are flash-frozen on the boat in order to remain chemical-free; no sulfites nor preservatives are needed to prevent browning.
Mayports are sweet and tender. To maintain freshness, always thaw in the refrigerator only a few ours before preparing. Maintain natural saltiness by lightly rinsing after removing the shells; NEVER soak in freshwater as this will destroy the natural flavorful character of wild shrimp. Avoid over-cooking, as they take only a few minutes to become plump and ready to eat.
What to do with the heads? Shrimp heads are nutrient rich, and they make an incredible stock that is a secret ingredient in Miso soups and seafood stews, chowder, and boils. simply bring a stock pot full of water to a light simmer, add the shrimp heads (and shells) to the water along with garlic and herbs, if desired. Let the heads simmer, never boil, until it becomes aromatic. Remove from heat. Use the broth immediately in a soup or stew, or freeze in blocks for later.
