Filet Mignon is the most tender cut available, and our grass-fed and grass-finished mignon cuts are from Florida. There are a variety of ways to prepare filet mignon, but the key is to protect the tenderness by avoiding overcooking. We prefer to lightly add salt and pepper to the cuts, then gently sear the filets in butter on a stove stop to create a light crust on the outside and a deep red in the middle.
