Brisket is a BBQ favorite, 'Low and Slow' is the secret sauce to preparing a perfect brisket. Season and/or brine your brisket in a sealed container in the fridge for 24 hours before placing in the smoker or oven. Cook slow (at least four hours) at a low temp (275 degrees until center of meat reaches 265).
